HONEY CAKE as easy as PIE!

Ever sat down to indulge in your very own box of cake?!

Well, for this year’s mivtzoim and honey cake give away, now you can!

I have a new love for cardboard boxes, now in the shape of a ‘pie slice’ and I have re-purposed the ‘pie ‘ for a deliciously, sweet piece of Lekach (Honey Cake).

I found these boxes on Etsy which came with parchment paper and forks and bakers twine and I just love the look!

I also like the idea that I can make loads of round cakes and simply slice off a fresh piece and give it away! It’s as easy as that!

Consider attaching a card with your favorite honey cake recipe and tucking it inside or replace a slice of cake with a small bag of honey cake ingredients and instructions for fiends to make their own mini cake or cupcake!

I love this recipe, it’s my favorite from my very special friend and fellow shlucha Altie Wolwovsky.

p.s. If your honey cake comes out shorter than you’d like, and you’d like the height in the box, simply stack two pieces on top of each other, for cake for two….or one with a big appetite:)

RECIPE:

4 eggs
1 1/2 cups sugar
1 cup oil
1 cup honey
1 cup strong black tea
 1/2 tsp baking soda
 1 squeeze of lemon juice
2 1/2 cup flour
2 tsp. baking powder
a pinch of salt
a sprinkle of cinnamon
1/2 tsp. vanilla
 
Beat together all wet ingredients and then add all dry ingredients. You can use a whisk if there are clumps of flour still remaining in the batter.
Pour batter into 1 9×13 pan or 2 8” round pans or even cupcake pans! Bake at 300 degrees for 45 minutes and check to see if top springs back when touched. Increase oven time in increments of 5 – 7 minutes until done. For cupcakes, bake for 15 minutes and check to see if done. Add baking time if needed.

My honey cakes are baked, frozen for now…material and string all ready to cover and give out next week iyh. You’re an inspiration to all Chana.
