Gluten Free “Jelly Doughnuts”

Use any Gluten Free Pancake mix that you like, or any Wheat Pancake batter mix for cute mini “doughnuts”! Have fun with filling options!!…think Dulce de Leche, chocolate & butterscotch pudding!

Ok, we are a family of all girls who are Gluten free plus 1 Rabbi…as of two weeks ago! (Somehow my boys are all fine indulging in mass quantities of wheat!!…lucky them!)

So, here is an idea for EASY, no fail “doughnuts”.

It’s actually pancake batter but really, it’s better than nothing!

(My home made recipe consists of any amounts of Tapioca Flour, Brown Rice Flour, Millet Flour and Hazelnut Meal flour, 2 – 3 eggs, and unsweet almond breeze and about 2 – 3 Tsp. of Baking powder. I mix it all together and adjust with either more liquid or flour to get right consistency…it comes out great each time, so just experiment. Personally, I like it best when I use a lot of the Hazelnut Meal flour).

I use an Ebelskiver Pan (you can purchase online or for great recipes go to www.williamsonoma.com)  and using a napkin, coat the pan with vegetable oil.

Then I spoon about 2 Tbsp. of the batter, while pan is on medium high heat. Then if you wish to add a filling, just spoon some jam, jelly on top of batter and then another little scoop of batter to cover jelly.

When you see edges are bubbly and somewhat cooked (better wait longer than flip too soon) carefully using two teaspoons, flip “doughnuts” over to cook other side.

In another two minutes, carefully take out of the pan by either spooning them out or using tongs.

You can sprinkle with icing sugar and enjoy with some honey or syrup too!
